Nigerian Fried Rice
Ingredients:
2 cup of ricecurry
1 carrot
green beans
2 piece chicken
salt
3 maggie cubes
spices (garlic, ginger)
2 cups of sunflower oil.
Directions:
wash the 2 cups of rice and place on a stove allow to boil for 15 minutes, while the rice is on the fire wash and slice the carrot, green beans (depending on which vegetable you want to use) place aside. wash the chicken, spice and place on stove allow to cook for 20 minutes (depending on how you want it) after which you grill. when the rice is ready (how i do it), i put a little amount of sunflower oil on the stove add the vegetables stir fry for 5 minutes ( this will help the vegetable not to be too soft) then add the curry and 2 maggie cubes with a little salt, place aside. for mixing the rice and vegetables ( that was fried), mix in a separate pot this will help the pot not to burn under, then add stock (from the chicken) and reduce heat to 4, use foil paper to cover the pot to allow it steam well them allow to steam for 15 minutes (depending on how soft the boiled rice is). when it is ready serve hot with the chicken and enjoy.

Fried Plantain and peppered Gizzered
wow i know right i got busy this weekend and thought of doing this Nigerian delicacy which is really nice, and i think my food lovers across the world should give it a try.
for the plantain, here are the instructions. simple i must say.
Ingredients:
2 ripe plantain
1 cup of sun flower oil
salt.
Directions:
take the skin of the plantain out
slice the plantain to any size you desire
place the frying pan on the cooking stove when hot as desired salt the sliced plantain and fry allow to be golden brown.
serve hot, as seen bellow.
For the peppered gizzard.
Instructions:
2 pepper fresh
1/2 Onion
2 fresh tomato
2 maggie cubes
1/2 salt
1 cup of sunflower oil
spices (ginger, gallic).
Directions:
wash the gizzard, add spice, salt and place on stove. while the gizzard is on the stove prepare pepper sauce. blend 2 fresh pepper, tomato and onion together, place pan on stove add 1 cup of of sunflower oil, add blended mixture, fry as desired. when the gizzard is ready stir fry then add the sauce leave on the stove for about 5 minutes. serve hot with plantain and enjoy.

Mashed potatoes coated in egg with veggie and egg sauce.

½ onion
½ bell pepper the
yellow and orange one
½ spinach (sliced)
2 eggs
1 spoon of
sunflower oil
Pinch of salt
Blended Pepper.
Process:
Peel the potatoes
wash and place it in the pot and then cook, while the potato is cooking wash
and slice bell peppers and onions. When the potato is cooked smash it but not
too much (depending on how soft the potato is).
Break an egg in a bowl add salt and pepper (you can
add anything you want in the egg at this point, but for me salt and pepper will
do) place frying pan on the stove and reduce heat to the minimum, add sunflower
oil.
Put the smashed potato in the spiced egg when the oil is hot put the
potato into the pan until it turns golden brown. Take it down and place in the
plate, with the same frying pan add 1 spoon of sunflower oil, add onions and
bell peppers allow to fry well, then break an egg in a bowl add salt and pepper
beat the egg and add it to the onions and bell peppers allow to fry for 1
minute the add sliced spinach stir and serve with potatoes hot.

White Rice, vegetable and Plantain

For lunch ideas, on a sunday afternoon you could try white rice, vegetable and plantain, i love eating rice a lot do you? well try this...
Ingredients:
Rice,
spinach,
tomato,
pepper,
salt,
maggie,
vegetable oil,
beef,
plantain.
Instructions:
wash the rice, place it in the pot, add water and put it on the stove, allow to boil until almost ready drain water from the rice, wash, add salt and place back on the stove reduce the heat and let the rice steam. Place the pot on the stove add vegetable oil, onion, and chopped or blended tomato then fry for about 10 minutes. Add salt, maggie, pepper allow to fry for 5 minutes (depending on how well fried you want it) then add stock, it should cook for 10 minutes. when it is ready add the spinach reduce heat allow to steam for few minutes, fry plantain how you want it and serve.

Beans
Trying to be creative with cooking is rewarding, today for me i will be cooking from a different angle.
Beans is the focus for today's cooking, we have different types of beans, brown, white, red and kidney beans.For todays recipe i am using honey brown beans. It was cooked the way i sometimes cook rice and trust me its worth it. when i started cooking beans i just do it the normal way by just adding oil, pepper, salt and onion but trying to do it differently proved rewarding.
Ingredients include:
brown Honey beans,
carrot,
spinach,
beef,
tomato,
onion,
palm oil,
crayfish,
water,
salt,
maggie,
pepper and plantain.
Instructions:
Place the pot on the fire wash the beans add water and leave to cook until the beans is really soft, take down and drain keep aside. For the sauce, place the pot on the stove add palm oil, chopped or blended tomato, fry for 10minutes then add crayfish, maggie, salt and pepper and stir. before now the beef had been on the fire, so add the beef and stock allow to boil for 5minutes then add beans when its almost ready add the carrot and when its ready before serving add the spinach and allow for 2minutes to steam before serving. at the side is fried plantain.

Pancakes
Love for pancakes
Pancake is very nice if prepared well and could be ideal for breakfast. Various countries have different method of preparing pancake, Interestingly, in Britain they celebrate pancake day each year. do you know the history behind the pancake fixed day? it is usually celebrated the tuesday before ash-wednesday, this is the day were by christians clear up all the fatty things they have in their fridge in preparation for the lenten season which starts the next day. Next year the 17th of February 2015 would be the next pancake day :).
Ingredients include:
100g flour
3 table spoon of unsalted butter (melted)
a pinch of salt
1 small cup of whole milk
1 tea spoon of vanilla extract
3 eggs
2 teaspoon baking powder
one handful sugar.
Method:
For the wet ingredients:
Break the egg in a bowl and pour in the milk and melted butter and mix. Next add the dry ingredients firstly add the flour, then sugar, baking powder and mix everything together. Then add the vanilla extract and mix with a spatula.
Then leave the mixture to rise for about an hour, with a spoon mix well. Heat your pan or hot surface for few minutes on medium heat. grease the pan with butter and increase the pan a little and drop the mixture on the frying pan. leave the pancakes
to cook, when you see bubbles at the edges flip it over with a spatula. Allow to cook on the other side for few minutes, as a sign that it is cooked the pancake should be browned on both sides.
Place the pancake on a plate and serve. (it can be toped with either honey, golden syrup or fruits and enjoy).
