Egusi soup

Egusi soup is a Nigerian delicacy which is eaten in most part of the country (Nigeria) Egusi soup is made from melon seeds, grounded. They are different method of preparation, the soup contains leaf vegetables (it could be ugu, spinach, bitter leaf or okazi leaf), meat, dried fish and stock fish.  Egusi soup can be eaten with either pounded yam, amala, fufu or eba.



Ingredients:

2 cups of Egusi
Stock fish
1/2 kilo of beef
2 spoons of crayfish
2 spoons of palm oil
1 onion
seasoning
salt
pepper
3 maggie cubes
Ugu and spinach leaves

Directions:
wash the beef, season it and place it on the stove to cook, while it is cooking sock the stock fish in hot water, drain and add to the beef in the pot. When that is ready, place another clean pot on the stove add palm oil allow to get hot, then add onions, egusi seeds and start starring, then add crayfish and some maggie cubes, and keep starring try not to allow the egusi to burn. When it has fried well add the beef stock that was prepared earlier stair add some water and allow to cook.  While it is cooking season the soup by adding salt, pepper, spices (optional), after that allow to cook for like 20 minutes then add the washed and sliced ugu and spinach leaves, allow to steam for few minutes and your egusi soup is ready enjoy.
