Nigerian Fried Rice


Ingredients:

2 cup of rice
curry
1 carrot
green beans
2 piece chicken
salt
3 maggie cubes
spices (garlic, ginger)
2 cups of sunflower oil.

Directions: 

wash the 2 cups of rice and place on a stove allow to boil for 15 minutes, while the rice is on the fire wash and slice  the carrot, green beans (depending on which vegetable you want to use) place aside. wash the chicken, spice and place on stove allow to cook for 20 minutes (depending on how you want it) after which you grill. when the rice is ready (how i do it), i put a little amount of sunflower oil on the stove add the vegetables stir fry for 5 minutes ( this will help the vegetable not to be too soft) then add the curry and 2 maggie cubes with a little salt, place aside. for mixing the rice and vegetables ( that was fried), mix in a separate pot this will help the pot not to burn under, then add stock (from the chicken) and reduce heat to 4, use foil paper to cover the pot to allow it steam well them allow to steam for 15 minutes (depending on how soft the boiled rice is). when it is ready serve hot with the chicken and enjoy.

Fried Plantain and peppered Gizzered

 wow i know right i got busy this weekend and thought of doing this Nigerian delicacy which is really nice, and i think my food lovers across the world should give it a try.
for the plantain,  here are the instructions. simple i must say.
Ingredients:
2 ripe plantain
1 cup of sun flower oil
salt.

Directions:
take the skin of the plantain out
slice the plantain to any size you desire
place the frying pan on the cooking stove when hot as desired salt the sliced plantain and fry allow to be golden brown.
serve hot, as seen bellow.
 For the peppered gizzard.
Instructions:
2 pepper fresh
1/2 Onion
2 fresh tomato
2 maggie cubes
1/2 salt
1 cup of sunflower oil
spices (ginger, gallic).

Directions:
wash the gizzard, add spice, salt and place on stove. while the gizzard is on the stove prepare pepper sauce.  blend 2 fresh pepper, tomato and onion together, place pan on stove add 1 cup of of sunflower oil, add blended mixture, fry as desired. when the gizzard is ready stir fry then add the sauce leave on the stove for about 5 minutes. serve hot with plantain and enjoy.

Mashed potatoes coated in egg with veggie and egg sauce.



 Creativity is important and special, the way you interpret it to the world matters! creativity is the foundation of life. Akwumaba  


2 big white potatoes
½ onion
½ bell pepper the yellow and orange one
½ spinach (sliced)
2 eggs
1 spoon of sunflower oil
Pinch of salt

Blended Pepper.
Process:
 Peel the potatoes wash and place it in the pot and then cook, while the potato is cooking wash and slice bell peppers and onions. When the potato is cooked smash it but not too much (depending on how soft the potato is).
Break an egg in a bowl add salt and pepper (you can add anything you want in the egg at this point, but for me salt and pepper will do) place frying pan on the stove and reduce heat to the minimum, add sunflower oil. 
Put the smashed potato in the spiced egg when the oil is hot put the potato into the pan until it turns golden brown. Take it down and place in the plate, with the same frying pan add 1 spoon of sunflower oil, add onions and bell peppers allow to fry well, then break an egg in a bowl add salt and pepper beat the egg and add it to the onions and bell peppers allow to fry for 1 minute the add sliced spinach stir and serve with potatoes hot.
