Roasted catfish !!!!! Yummy

How i roast my catfish
 Firstly, I was the tomatoes, onions and pepper
 Then slice it
 Fry the and season (i used maggie, pepper, spices).
 Spice (Marinate) up the fish and place in the fridge for an hour (i used pepper, maggie, salt and vegetable oil)
 Fry the tomato sauce (how u want it to be)
 Bring out the marinated fish and add the tomato sauce on the fish
 Add the sauce on both sides
 then wrap the foil paper and place in the already heated oven, allow to roast for an hour...
and your roasted catfish is ready, its really nice i loved it, give it a try guys.

Wholemeal pancake

This is actually the same as the normal pancake, the only difference is the wholemeal flour that was used instead of white flour really nice and do give it a try. Enjoy...

ZOBO

Zobo is gotten from Hibiscus leaves, its rich, contains a lot of nutrients and has this dark red colour. This loverly drink is known across Asia, Africa and Jamaica.



Ingredients:
1 cup of zobo
pineapple (optional)
ginger (optional)
suger or sweetener

Instructions:
pour 1 cup of zobo in a big bowl and wash then put into a pot add water, ginger, pineapple and allow to boil for 40 minutes.
bring down to cool then add sugaf or sweetner, before you sieve the drink and put it in the fridge then serve chilled (it taste nice chilled).




The health benefit include:
it also helps to clean your system
calcium
iron
vitamine C
protein
lowers blood pressure and cholesterol levels.

why not give it a try...

it is a lovely Nigerian drink

Welcome August

This month will be filled with everything beautiful, including lovely dishes... it promises to be special

Sweet potato porridge

A good way to end the month i present to you this mouth watering dish

Things you need:
2 sweet potato (washed, peeled and sliced)
1 onion 
pepper
salt
maggie
spinach (washed and sliced)
meat (already boiled)
1/2 cup of palm oil (depending on how much oil you need in your food)
water
spices (garlic, ginger, nutmeg)
2 fresh tomato (washed and sliced).

Instructions:
place the (washed, peeled and sliced) sweet potato in a pot, add water and salt allow to cook for 20 minutes. While that is cooking, we will make the sauce, place the pot on the stove, add palm oil (do not allow the oil to fry) add onions, tomato (allow to fry for 5 minutes) then add the (already cooked) meat, taste (at this point if you want to add more spices you can, if it is not enough) add spices and salt, allow to cook for 5 minutes then reduce heat. Take down the cooked sweet potato drain the water and add it to the tomato sauce mix together allow to cook until almost ready (like in 5 minutes to serve) add the spinach reduce the heat of the stove allow to steam until food is ready to be served.


 When it is ready serve hot and enjoy you meal.

Nigerian Meat pie

Meat pie is a Nigerian snack 
 give it a try today and enjoy...
Things you need: for the dough
plain flour 1kg
baking powder (optional i do not use it sometimes)
butter
pinch of salt
1 cup of water (depending on the size it could be 1/2).
3 Irish potatoes (optional and depending on the number)
1 medium sized onion
1 cup of sunflower oil
spices (optional)
pinch of salt
minced meat
carrot
green beans
1 egg ( ornamental: to rub on the meat pie before baking).
For the meat pie dough:
turn the flour in a bowl, add baking powder (optional) and pinch of salt. mix them together, add butter and mix well and finally water. mix well (knead) until dough becomes soft and smooth.

For the filling:

wash and peel the potatoes and place on the stove to cook. Then wash, clean and cut the carrot, onions and green beans into any shape you desire. place a frying pan on the stove, add sunflower oil add vegetables and spice it. Take down add sunflower oil add minced meat fry well on low heat spice up, add salt, when ready add vegetables and potatoes cover and allow to cook for 15 minutes. When its cooked, to make the filling tick put flour in a small bowl add water and include in the mixture allow to cook for 5 minutes then take down.

  The making:

preheat the oven and continue with the meat pie. Take a little from the ready made dough knead take a rolling pin and roll out; to achieve the meat pie shape take a plate or any object with the perfect shape, shape the dough after rolling take some filling and place in the centre of the shaped out dough, cover it over use a folk to close up the edges and place in a baking pan (continue the process until all the dough is filled up).
With the help of a kitchen brush, polish the meat pie using the egg, then place it in the oven and allow to cook, when it is ready the meat pie would be golden brown as seen in the picture bellow. Serve hot and enjoy.
